Salt Ramen
Pure, delicate umami from northern Japan — in every sip.
Lake Jūsanko, located on the Tsugaru Peninsula, is where the mineral-rich waters of the Japan Sea meet fresh snowmelt from Mt. Iwaki. This unique environment produces Yamato shijimi — a prized freshwater clam known for its clean, refined umami.
This ramen highlights that natural flavor with a clear, well-balanced salt broth that delivers depth without heaviness. Paired with smooth, thin, wavy noodles made from 100% domestic wheat, it offers a light yet satisfying experience.
Elegant, restorative, and distinctly Aomori.

Lake Jūsanko, located on the Tsugaru Peninsula, is a unique coastal lagoon where freshwater and seawater meet. This ideal brackish environment produces Yamato clams with exceptional depth of flavor, prized by chefs across Japan.
Shijimi broth is known for its delicate yet deeply satisfying umami. Unlike rich pork or chicken broths, it leaves the palate clean and refreshed — perfect for those who appreciate subtle, refined flavors.
Made from 100% domestic wheat using our proprietary Long-Life process, these thin, wavy noodles deliver a fresh texture and springy bite without the need for refrigeration.
With a 100-day room-temperature shelf life and elegant packaging, this product is a popular regional gift from Aomori and an excellent introduction to Japanese cuisine for international customers.
Optional toppings (per serving): Narutomaki (fish cake), green onion, wakame seaweed, soft-boiled egg

Drain the noodles and add to the broth. Top as desired and serve immediately.
Tasting Notes
The delicate umami of shijimi is best enjoyed while hot. For the first serving, we recommend minimal toppings to fully appreciate the clean, refined flavor of the broth.
