“Bara-yaki,” meaning stir-fried beef with onions, is a beloved local dish from Towada City in Aomori, Japan. Thinly sliced beef and generous amounts of onion are cooked in a rich sweet-savory soy-based sauce, then combined with udon noodles that absorb all the flavorful juices.

Made with Nebariogoshi wheat — Aomori’s high-elasticity noodle wheat — these udon noodles are silky, springy, and ideal for stir-frying. They maintain their texture without becoming soggy, even at high heat.
The sauce highlights two of Aomori’s finest ingredients: apple concentrate for natural sweetness and depth, and garlic for rich, savory flavor. Authentic local ingredients create a truly distinctive taste.

Ingredients (per serving): Thinly sliced beef, onion, cooking oil
Cook the onions
Heat oil in a frying pan over medium heat. Add sliced onion and cook until soft and translucent (about 3–4 minutes).
Add the beef
Add thinly sliced beef and cook over medium-high heat until fully cooked, stirring occasionally.
Add noodles and sauce
Add the udon noodles and the enclosed sauce. Stir-fry well until evenly coated. Cook until the sauce is reduced and slightly caramelized.
Serve
Plate and finish with shichimi or chili flakes, if desired.
